First the reference to using pistols it doesn't exclusivly say anything about ONLY pistols. Is it meant to and if not and you were using SMG's there is nothing to say you couldn't call 2 by triple for instance.
Aso on the other example of using two computers. Would this allow you to be working on two different problem cards at once on two different systems? or even a comms problem and hacking problem at the same time?

Also why should ambidextrous increase your multi tasking ability. I can type on 2 keyboards at once but processing what I am doing is something completely different than being able to aim 2 weapons on the same target.

I agree mate I don't think it should be possible to be honest but the description could lead to that implication and wanted to get to the bottom of it.

In the case of Strike, I'm guessing this works like it does with Pistols.
However Choke?
Doesn't choke normally require two hands at once?
Or can I now choke two opponents at once?
(same for throw)

You can choke two people at once (the requirement to use both hands was removed)
